Cookies 'n' Cream Brownie Cookies

So once more I find myself almost a month between posts! I'm not going to lie, the end of the semester takes a lot out of you. I'm in an odd place where I've been craving less super-sweet baked goods and more savory, oatmeal, honey, nut, etc. based goods. That being said, these cookies are not like that at all. Which is wonderful. I brought these into work and they disappeared in about two hours, all two dozen of them! You really cannot go wrong with a brownie cookie, it's the perfect mix of textures!

Quintuple Chocolate Chip Cookies

Are you having a terrible day? Papers due? Roof leaking? Did you forget to buy milk and now you're forced to eat dry cereal for breakfast? Is it Tuesday? Basically, what I'm saying is you need to find some excuse to make these deliciously indulgent cookies. I made them a couple of weeks ago to mitigate the damage of a particularly hellish week and they disappeared fast. The trick to these is mixing a hazelnut chocolate bar right into the batter so it melts as the cookie bakes. Oh, and big, fat Ghirardelli milk chocolate chips.

Pumpkin Oatmeal Chip Cookies

So I'm sorry it's been a year since I last put up a recipe. I've certainly been baking, I just haven't had as much time to post! I'll have to take this into account in December, because I really want to do 25 days of Christmas Cookies...

Anywho. These Pumpkin Oatmeal cookies are nice and moist and are perfect for fall. The pumpkin gives it a nice chewiness and that gorgeous orange color. Load these up with White Chocolate Chips, don't be shy.

Pumpkin Spice Cheesecake Cookies

These cookies were originally going to be pumpkin and not just pumpkin spice, but my pumpkin had gone bad and I didn't realize it until too late, so as I often do, I improvised. These turned out fantastic despite their lack of actual pumpkin, and they smell just fantastic. I found myself opening up the tupperware just to get a whiff throughout the day. 

By the way? Cheesecake cookies rock. Red velvet stuffed cheesecake cookies for Christmas? They're coming.

Mini Pumpkin Cupcakes

I made these the first week of September--I just can't stand it. I want it to be fall! These pumpkin cupcakes are nice and moist and kind of addicting. I used some leftover white chocolate icing from my Strawberry Cupcakes and they turned out great!

Triple Chocolate Butterscotch Cookies

So I stumbled onto this recipe a couple of weeks ago and knew I had to try it out. These are pudding cookies, which basically means you dump a package of Jello Instant Pudding into your cookie dough and it comes out moist and flavorful! These may be a little bit of an overload for anyone who's not a big fan of butterscotch (not a problem for me, I must of eaten three cookies worth of raw dough) but don't worry, more pudding cookie recipes are coming your way. Did you know they make pumpkin spice and gingerbread jello pudding flavors?!

Nutella White Chocolate Shortbread Cookies

I've been wanting to try out a shortbread cookie for a long time, and I have this lovely jar of Nutella sitting in my cupboard that I'm ashamed to say I've been neglecting. I first discovered the hazelnut spread back in 2008 while I was in Germany, and I absolutely love the taste of it when it's combined with white chocolate or a vanilla cream. These petite little cookies turned out great and I think they've got a nice balance between the chocolate and nutella flavors.

Strawberry Cupcakes with White Chocolate Icing

I was asked to make these cupcakes by a fabulous friend, and I was at first a little weary about having fresh strawberries in a cupcake batter because I was afraid that they'd get too mushy and not bake up. But these cupcakes are nice and dense and I added yogurt to make them a bit more creamy. Paired with a simple white chocolate frosting, these are a refreshing send off for summer! I modified the recipe so it would only make nine cupcakes, but you could definitely double it for a larger batch.

So this might be considered a cheater recipe, considering the fact that it isn't technically baked in any way, shape, or form. But it's easy, and cold, and a nice light recipe for hot summer days. And look how cute that little sundae dish is! I got it for a buck at the dollar store and had been searching for some way to use it..

Pokeball Oreos

I love any reason to make chocolate covered oreos, and while I'm not too crazy about Pokemon, my physicist loves it. These were made with Wilton dipping chocolate and took maybe twenty minutes to make!

White Chocolate Cherry Almond Vanilla Cookies

Try saying that name three times fast..

I am quite happy to be posting my first recipe for this blog, and I think this one is a fantastic one to start with. Made for my father, who loves all things white chocolate, I accidentally bought big, plump, dried cherries the first time I went to make them instead of cranberries. For the record, I hate all things cherry, but I was pleasantly surprised how well they went with this cookie! I use a liberal amount of vanilla to give it a nice, smooth taste.
