I like these cookies because they're pretty simple, and they only get softer and chewier the longer you keep them stored. The nutmeg is really what really sold me on these, and it goes perfectly with the nice crunch of chopped walnuts.
Ingredients
2.25c Flour
1/2c Butter (softened)
1c Brown Sugar
1 Egg
1c Applesauce
1/2tsp Baking Soda
1tsp Cinnamon
1/2tsp Nutmeg
1tsp Vanilla
1tsp Vanilla
1/2-1c Chopped Walnuts
OVEN: 350F
BAKE: 10-12min
YIELD: ~2.5 Dozen
1. In a standing mixer, cream together butter and sugar.
2. Mix in applesauce, egg, vanilla, cinnamon, nutmeg, and baking soda.
3. Slowly add in flour until incorporated.
4. Mix in chopped nuts.
5. Drop by tablespoons onto a cookie sheet lined with parchment paper and bake.
