Triple Mint Cookies

There are very few things that I find as refreshing as the flavor of mint chocolate chip. These cookies are a bit of a mint overload--a pleasant one, I hope--stuffed with mint M&Ms, mint chocolate chips, and mint chocolate hot chocolate. I made them big and fat, too, just to add to the indulgence. If you can't find mint M&Ms I'm sure you can forgo them without any great culinary tragedy! 


Ingredients
1/2c Butter (softened)
1/4c Sugar
1/3c Brown Sugar
1 Egg
1/2tsp Salt
1/4tsp Baking Soda
1.5pkgs Mint Hot Chocolate Mix
1.3c Flour
2pkgs Mint M&Ms
1c Nestle Mint Chocolate Chips

OVEN: 350F
BAKE: 10-11min
YIELD: ~16



1. Cream together butter and sugars together in a standing mixer until smooth and fluffy. 

2. Mix in egg, salt, and baking soda.

3. Mix in hot chocolate until well incorporated.

4. Slowly add in flour until incorporated.

5. Mix in M&Ms and Mint Chocolate Chips. Refrigerate for about 15-20min before baking. 

6. Bake up and enjoy!
