Peanut Butter Cookies

I'm not going to lie, after chocolate chip and snickerdoodle cookies, peanut butter cookies are my absolute favorite. Like, four-cookies-later-can't-stop-eating favorite. These cookies have very minimal flour, which means that they taste pretty much straight up like peanut butter out of the jar. 




Ingredients

3/4c Peanut Butter
1/4c Brown Sugar
1/4c Sugar
2tbsp Flour
1 Egg
1tsp Vanilla

BAKE: 10min
OVEN: 350F
YIELD: 15 cookies

1. Combine everything except the flour in a standing mixer until well incorporated. 

2. On a lower speed, add the flour

3. Pop them in the fridge for about twenty minutes before shaping them into small, 1-inch balls. 


My cookies don't have those fork impressions, because I like happy, round, unscarred baked goods. 

Also, because these cookies are so fabulously easy, it's really simple to try out some variations like: 


Rolling them in cinnamon sugar before baking, or


Throwing some peanut butter M&Ms on them right out of the oven (highly recommended)
